Zucchini Bread


First off, I have been spelling zucchini wrong for years! Spell check just informed me of it. So all my labels in the freezer are misspelled. Sad smile How embarrassing! I gave away misspelled bread!!!

Yesterday was spent making bread. I had thought I’d just hurry and get it out of the way. Its only quick bread, it shouldn’t take long to use up the rest of the zucchini. Right?

You can tell it’s been a while since I made any. It took all frigging day. I had to go out in the sun to get away from the heat in the kitchen. Went for a short bike ride to cool off!

Ran out of everything. Hubby (who wanted this bread bad!) went to the store for more supplies. And then, I ran out of spices. Damn, it was a long day.

I never got to the peach jam, either. So now, today, I have to spend all day in the kitchen making peach jam.

I love peaches – fresh from the tree, out of a jar or can. I do love peaches. But, I don’t love peach jam. I don’t know why I volunteered to turn our peaches into jam. It just came out of my mouth. And now, I have to do it, because my hubby was all ‘Oh, yeah! That sounds good!’

Skinning the damn things is almost as bad as skinning an animal. Well, I haven’t actually skinned an animal before. But, the thought of dipping in boiling water, then freezing, then rubbing my fingers over it to loosen the skin, repels me almost as much as the thought of the other. Almost. Hubby is the killer, I just cook –  no butchering for me. Ugh!

So, I had the smoking dream last night. I hadn’t had that in a while. I woke up – forgetting that I was a nonsmoker, because in my dream I decided that I didn’t want to be a nonsmoker and started smoking again. Very real!!

It is nice not having that taste in my mouth ALL THE TIME! It’s like licking a dirty ashtray. I wonder how nonsmoker’s feel about kissing a smoker? If our mouth has a yucky taste in it, what must it be like to the person latched on to those lips?

My husband is a smoker but I can’t say that I ever noticed an odd taste during a kiss. Except after his coffee. I don’t like coffee and do not want to kiss him after his morning coffee!

Maybe, I have to be a nonsmoker for longer before it will bother me. I don’t know. He has been the one latched onto my lips for sssooooo long that I can’t imagine it being any different.

We celebrated 32 years of married (uh) bliss in August. (Please, lord, don’t strike me down dead!) Okay, not always blissful, but 32 years all the same. It has not always been easy. All the same, I don’t want to wake up next to anyone else. He is the only one for me and I hope I am the only one for him. Or at least, the only one for him until I either die or decide he is not the only one for me anymore.

So, here is my zucchini bread recipe. Don’t share – it’s a secret! Winking smile

No, seriously, enjoy. I constantly add a little of this or a bit more of that, so no one makes it like I do, ever. Heck, I don’t even make it like I do. One batch yesterday, had only half the nutmeg – I ran out and I didn’t want to wait for someone to go to the store. Earlier, my hubby ran out for me and I got a batch shredded, mixed, poured and in the oven. Swept and mopped the floor. And started labeling some soap, all before he got back from the store. I mean really, how long can it take!?! He said, ‘ I had to find the stuff!’

Hmmm, I was going to add a link so you could just download the recipe and my recipe disappearred in my computer! I printed it out and saved it multiple times, yet even after a search – it’s gone! Sad smile I’ll have to give the download link later. Looks like I have to retype my recipe.

Ingredients:

  1. 2 Eggs
  2. 2 cup granulated sugar
  3. ½ tsp lemon peel
  4. 2 tsp vanilla
  5. ¾ cup pineapple juice (from can) & oil
  6. 3 cup flour
  7. 1 tsp nutmeg
  8. ¼ tsp ground cloves
  9. 3 tsp cinnamon
  10. 1 tsp salt
  11. 2 tsp baking soda
  12. ½ cup raisins
  13. ½ cup chopped walnuts
  14. 2 cup peeled, grated zucchini – packed
  15. 1 – 8 oz can of pineapple tidbits (drain and use juice with oil)

Directions:

Preheat oven to 350 degrees.

Mix dry ingredients together and set aside.

Mix eggs, sugar, vanilla and juice/oil together; stir well. Stir in dry ingredients; mix well. Add in zucchini, walnuts, raisins and drained pineapple. Stir until well mixed; mixture will loosen up from liquids in fruit.

Pour into 2 loaf pans. Cook at 350 f for 1 hour and 20 minutes or until toothpick comes out clean (test like cake). Remove from pans and cool on rack.

May be frozen and eaten at later date.
